Ingredients

  • 2 tablespoon olive oil
  • 1 ½ lb chicken breast
  • 1 ½ teaspoon paprika
  • 1 ½ teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 12 oz gluten-free farfalle pasta
  • 4 tablespoon butter
  • 2 teaspoon dry shallots
  • 2 teaspoon Italian seasoning
  • ½ cup chicken broth
  • 2 tablespoon gluten-free 1:1 flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • ¼ cup reserved pasta water
  • ½ teaspoon salt
  • 1 teaspoon garlic powder

Instructions

  1. Boil the gluten-free farfalle according to package directions until al dente. Reserve ¼ cup pasta water, then drain.
  2. Mix paprika, oregano, garlic powder, thyme, black pepper, and salt in a small bowl.
  3. Pound chicken breasts to even thickness and season both sides with the spice mix.
  4. Heat olive oil in a large skillet over medium heat. Sear chicken for 5 minutes per side.
  5. Lower heat to medium-low and cook until chicken is done. Set aside to rest, then slice.
  6. In the same skillet, melt butter and add dry shallots and Italian seasoning. Stir until fragrant.
  7. Sprinkle in gluten-free flour and whisk to form a roux.
  8. Slowly add chicken broth and heavy cream, whisking continuously to avoid lumps.
  9. Add Parmesan cheese and stir until melted and smooth. Add reserved pasta water if needed.
  10. Season sauce with remaining salt and garlic powder.
  11. Add cooked farfalle and toss to coat in sauce.
  12. Top with sliced chicken and serve warm.
