Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 12 oz penne or fettuccine pasta
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken breasts on both sides with Cajun seasoning.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6–7 minutes per side until cooked through. Remove and rest before slicing.
  4. Reduce heat to medium and add butter and garlic. Sauté until fragrant.
  5. Add chicken broth and heavy cream. Simmer for a few minutes, then stir in Parmesan until smooth and creamy.
  6. Season with salt, pepper, and red pepper flakes if desired.
  7. Toss cooked pasta in the sauce, top with sliced chicken, and garnish with parsley. Serve hot.

Notes

  • Add bell peppers or mushrooms for extra texture.
  • Substitute shrimp for chicken for variation.
  • Use half-and-half for a lighter version.
  • Make your own Cajun seasoning if needed.
  • Reheat gently with a splash of broth or cream to maintain sauce consistency.
