Ingredients

  • Ripe bananas, mashed
  • All-purpose flour
  • Granulated sugar
  • Brown sugar

  • Salt
  • Eggs
  • Vegetable oil or melted butter
  • Vanilla extract
  • Cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, and salt in a bowl.
  3. In another bowl, combine mashed bananas, granulated sugar, brown sugar, oil (or butter), eggs, and vanilla until smooth.
  4. Stir the dry ingredients into the wet just until combined—some small lumps are okay.
  5. Beat the softened cream cheese with powdered sugar in a separate bowl until smooth and creamy.
  6. Pour half the banana batter into the pan.
  7. Dollop the cream cheese mixture evenly over the batter.
  8. Gently pour the rest of the banana batter on top, being careful not to mix the filling.
  9. Run a knife through gently to create a marbled top if desired.
  10. Bake for 55–65 minutes, or until a toothpick inserted into the batter (not the cream cheese) comes out clean.
  11. Let the loaf cool in the pan for 10 minutes, then move it to a wire rack to cool completely before slicing.
