Ingredients

  • 1.5 lbs ground beef or beef/pork blend
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs or crushed crackers
  • 2 tbsp ranch seasoning mix
  • 1/4 cup ketchup or BBQ sauce
  • 1/4 cup milk
  • 34 medium russet or Yukon gold potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 tbsp butter or oil (for greasing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13″ casserole dish.
  2. In a large bowl, mix ground beef, onion, garlic, egg, breadcrumbs, ranch seasoning, ketchup or BBQ sauce, salt, and pepper until just combined.
  3. Spread half the meat mixture into the prepared dish.
  4. Layer half the sliced potatoes on top, slightly overlapping. Season lightly and sprinkle some cheddar cheese.
  5. Add the remaining meat mixture and spread evenly.
  6. Top with remaining potato slices.
  7. Mix milk with a bit more ranch seasoning and drizzle over the top.
  8. Sprinkle with remaining cheddar cheese.
  9. Cover with foil and bake for 35 minutes.
  10. Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is golden and bubbly.
  11. Let rest for 10 minutes before serving.
