Ingredients

  • 1 lb ground beef
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 can cream of mushroom soup (or homemade creamy base)
  • 1/2 cup sour cream
  • 1 cup frozen corn or mixed vegetables
  • 1 1/2 cups shredded cheddar cheese
  • 1 package frozen tater tots
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp paprika, 1 tbsp Worcestershire sauce, or 1/4 cup chopped green chilies for added flavor

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, cook the ground beef with diced onion until the beef is browned and the onions are soft. Add the garlic during the last minute, then season with salt and pepper.
  3. Drain any excess grease and stir in the cream of mushroom soup and sour cream.
  4. Mix in the corn or vegetables and half of the shredded cheddar cheese.
  5. Spread the beef mixture evenly in the prepared baking dish.
  6. Arrange the frozen tater tots in a single layer over the beef mixture, covering the surface completely.
  7. Sprinkle the remaining shredded cheese over the tater tots.
  8. Bake the casserole for 35–40 minutes, or until the top is golden and bubbly.
  9. Let the casserole rest for a few minutes before serving.

Notes

  • For added heat, mix in chopped jalapeños or a can of diced green chilies.
  • Swap the cream of mushroom soup with cream of cheddar for a richer flavor.
  • Ground turkey or sausage can be used in place of ground beef.
  • Leftovers can be stored in the fridge for up to 4 days. Reheat in the oven at 350°F (175°C) for 15 minutes or in the microwave for a quicker option.
