Ingredients

  • 1.5 lbs sirloin steak or ribeye, cut into bite-sized cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil or neutral cooking oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp paprika
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp chives, chopped (optional)
  • 1 tsp fresh thyme leaves (optional)

Instructions

  1. Season steak cubes generously with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat until shimmering.
  3. Sear steak bites in batches for 1–2 minutes per side until nicely browned. Remove and set aside.
  4. Reduce heat to medium and add butter to the skillet.
  5. Once melted, stir in minced garlic and cook for about 30 seconds until fragrant.
  6. Add Dijon mustard, lemon juice, crushed red pepper flakes, paprika, and a pinch of salt. Stir to combine.
  7. Return steak bites to the skillet and toss in the butter until well coated.
  8. Garnish with chopped parsley, chives, and thyme before serving.
