Ingredients

  • 1 lb thinly sliced roast beef (deli or freshly cooked)
  • 4 hoagie or sub rolls
  • 4 slices sharp cheddar cheese
  • 4 slices provolone cheese (optional)
  • 2 tbsp butter or olive oil (for toasting rolls)
  • 1 packet beef au jus mix or 1 cup beef broth
  • 1/4 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp sweet pickle relish (optional)
  • Salt and black pepper, to taste
  • Optional: sliced onions or sautéed green peppers

Instructions

  1. Warm the roast beef in a skillet with a splash of broth or in the microwave until just heated through.
  2. In a bowl, whisk together mayonnaise, mustard, Worcestershire sauce, and sweet pickle relish. Season with salt and pepper to taste.
  3. Slice the hoagie rolls and brush the inside with butter or olive oil. Toast them in a skillet or under the broiler until golden.
  4. Layer the warm roast beef on the bottom half of each roll. Top with a slice of cheddar (and provolone if using).
  5. Spoon warm au jus over the meat to help melt the cheese.
  6. Spread the prepared sauce on the top half of the roll, then close the sandwich.
  7. Optional: Add sliced onions or sautéed green peppers for extra flavor.
  8. Serve immediately, with extra au jus on the side for dipping.
