Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 cups diced Yukon gold or russet potatoes
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth or stock
  • 1 tbsp olive oil or butter
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onions, carrots, and celery for 5–6 minutes until softened.
  2. Add garlic and cook for another minute until fragrant.
  3. Add diced potatoes, bay leaf, thyme, and chicken broth. Bring to a gentle boil.
  4. Add chicken, reduce heat to a simmer, and cook for 20–25 minutes until chicken is cooked and potatoes are tender.
  5. Remove chicken, shred or chop it, then return it to the pot.
  6. Season with salt and pepper to taste. Simmer for a few more minutes to meld flavors.
  7. Ladle soup into bowls and garnish with chopped parsley before serving.
