Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup strong brewed coffee (cooled)
  • 1 tsp vanilla extract
  • 2 tbsp butter (melted)

Instructions

  1. Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In a separate bowl, beat the eggs, then add the milk, cooled brewed coffee, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Pour about 1/4 cup of batter onto the hot skillet for each pancake.
  6. Cook the pancakes for 2–3 minutes on each side or until golden brown and cooked through.
