Ingredients

  • 4 fresh cod fillets (boneless, skinless)
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 cup jarred or homemade roasted red peppers
  • 1/2 tsp smoked paprika
  • 1/3 cup heavy cream or coconut milk (optional)
  • 1/2 cup chicken or vegetable broth
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Pat cod fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onion until translucent, then add garlic and cook until fragrant.
  3. Blend the onion, garlic, roasted red peppers, broth, and smoked paprika until smooth.
  4. Return the sauce to the skillet and stir in cream or coconut milk if using. Simmer for 5–7 minutes to thicken slightly.
  5. Place the cod fillets in the sauce, cover, and cook over low heat for 8–10 minutes until fish flakes easily with a fork.
  6. Garnish with chopped parsley or basil and serve hot.
