Ingredients

  • Rotini or bow-tie pasta
  • Cooked chicken, diced or shredded
  • Bacon, cooked and crumbled
  • Romaine lettuce, chopped
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Cheddar or Swiss cheese, cubed or shredded
  • Green onions, sliced
  • Mayonnaise
  • Sour cream or Greek yogurt
  • Dijon mustard
  • Lemon juice
  • Salt and pepper

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, whisk together mayonnaise, sour cream (or Greek yogurt), Dijon mustard, and lemon juice; season with salt and pepper.
  3. Add cooled pasta to the bowl with the dressing and toss until coated.
  4. Gently fold in chicken, bacon, lettuce, tomatoes, cucumber, cheese, and green onions.
  5. Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed.
  6. Chill the salad for at least 30 minutes to allow flavors to meld before serving.
