Ingredients

  • 12 oz tri-color rotini or short pasta
  • 1 1/2 cups cooked turkey breast, diced
  • 6 slices bacon, cooked and chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded iceberg or romaine lettuce
  • 1/4 cup red onion, finely diced
  • 1 cup cheddar cheese, cubed or shredded
  • 2 hard-boiled eggs, chopped (optional)
  • 1/4 cup dill pickles or pickle relish
  • For the dressing:
  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook pasta in salted water until al dente. Drain and rinse under cold water.
  2. While pasta cooks, prepare turkey, bacon, tomatoes, lettuce, onion, cheese, eggs, and pickles.
  3. In a bowl or jar, whisk together mayonnaise, Dijon, lemon juice or vinegar, garlic powder, paprika, salt, and pepper.
  4. In a large bowl, combine pasta, turkey, bacon, tomatoes, lettuce, onion, cheese, eggs, and pickles.
  5. Pour dressing over salad and toss gently to coat all ingredients evenly.
  6. Cover and refrigerate for at least 30 minutes before serving.
  7. Toss again before serving and adjust seasoning if needed.
