Ingredients

  • 1 can refrigerated cinnamon roll dough (with icing included)
  • 34 apples (peeled and diced, mix of tart and sweet like Granny Smith and Honeycrisp)
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Peel and dice the apples, toss them with brown sugar, cinnamon, and nutmeg. Sauté in a skillet with butter for 5–7 minutes until soft and caramelized.
  3. Unroll the cinnamon rolls, separate them, and press half of them flat to form the first layer in the baking dish.
  4. In a bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth. Spread this over the cinnamon roll base layer.
  5. Spoon the cooked apples evenly over the cream cheese mixture.
  6. Press the remaining cinnamon rolls flat and place them on top of the apples to form the final layer.
  7. Bake the lasagna for 25–30 minutes, or until the cinnamon rolls are golden and baked through.
  8. Once slightly cooled, drizzle the icing that came with the cinnamon rolls over the top.
  9. Let it sit for a few minutes before slicing and serving warm.

Notes

  • For a bit of crunch, add a layer of chopped pecans or walnuts over the apples.
  • Drizzle caramel sauce between the layers before baking for an extra gooey version.
  • Swap the cream cheese filling for a lighter custard if you prefer a more eggy flavor.
  • Store leftovers covered in the fridge for up to 3 days. Reheat in the microwave for 20–30 seconds or in the oven at 300°F (150°C) for 10 minutes to keep the cinnamon rolls soft.
