Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, sliced into strips
  • 1/2 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 tsp curry powder
  • 1 tbsp lime juice
  • Skewers (wooden or metal)
  • 1/3 cup creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp brown sugar or honey
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 24 tbsp water (to thin)
  • 1 tsp sriracha or chili garlic sauce (optional)

Instructions

  1. Slice the chicken into thin strips and place in a bowl or zip-top bag.
  2. In a separate bowl, whisk together coconut milk, soy sauce, brown sugar, garlic, coriander, turmeric, curry powder, and lime juice to make the marinade.
  3. Pour the marinade over the chicken, mix to coat, and let marinate for at least 30 minutes or up to overnight.
  4. Meanwhile, prepare the peanut sauce by mixing peanut butter, soy sauce, rice vinegar or lime juice, brown sugar or honey, garlic, ginger, and water until smooth. Add sriracha if desired. Adjust consistency and seasoning to taste.
  5. Thread the marinated chicken onto skewers.
  6. Grill or pan-sear the skewers over medium-high heat for 3–4 minutes per side until cooked through and lightly charred.
  7. Serve hot with the peanut sauce for dipping or drizzling.

  • Swap chicken for shrimp or tofu for variation.
  • Use almond butter for a different nutty flavor.
  • Add chili flakes to marinade or more sriracha for extra heat.
