Ingredients

15.25 oz box white cake mix
Egg whites (as required by cake mix)
Water (as required by cake mix)
Vegetable oil (as required by cake mix)
3 oz box cherry gelatin (Jell-O)
1 cup boiling water
½ cup cold water
8 oz cream cheese, softened
1 cup powdered sugar
1 ½ cups heavy cream
21 oz can cherry pie filling

Instructions

Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Prepare the cake mix according to package instructions using egg whites, water, and oil. Pour into the dish and bake for 28–32 minutes, or until a toothpick comes out clean.
Let the cake cool for 10–15 minutes. Using the end of a wooden spoon, poke holes about 1 inch apart across the cake.
In a bowl, dissolve the cherry gelatin in 1 cup boiling water. Stir in ½ cup cold water.
Pour the gelatin mixture evenly over the cake, allowing it to soak into the holes.
Cover and refrigerate for at least 4 hours, or until fully chilled.
In a large bowl, beat cream cheese and powdered sugar until smooth. Gradually add heavy cream and whip until light and fluffy.
Spread the frosting evenly over the chilled cake.
Top with cherry pie filling, spreading evenly.
