Ingredients

  • 1 lb ground beef
  • 2 cups cooked rice
  • 3 bell peppers, diced (any color)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté the diced onion and bell peppers until soft.
  3. Add the garlic and ground beef, cooking until the meat is browned. Drain any excess fat.
  4. Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for a few minutes.
  5. Mix in the cooked rice and remove the skillet from heat.
  6. In a greased casserole dish, layer half of the beef and rice mixture, top with half the cheddar and mozzarella. Repeat with remaining mixture and cheese.
  7. Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving.
