Ingredients

  • 1 lb ground beef
  • 34 medium potatoes, diced small
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until they begin to soften and brown.
  2. Add chopped onion and cook for another 3–4 minutes until soft and fragrant.
  3. Push potatoes to one side and add ground beef to the skillet. Break it up and cook until browned and fully cooked through.
  4. Stir in garlic, salt, pepper, paprika, and oregano. Mix everything together and cook for another 2–3 minutes.
  5. Once potatoes are tender and everything is combined, sprinkle cheddar cheese over the top.
  6. Cover skillet with a lid or foil and remove from heat. Let sit for 2–3 minutes until cheese is melted.
  7. Garnish with parsley before serving.
