This easy Cattle Drive Casserole recipe combines savory beef, peppers, and taco seasoning with a fluffy biscuit crust and creamy cheesy layers for a comforting family dinner.
1.5 pounds lean ground beef
1 red bell pepper, seeded and chopped
1 yellow onion, chopped
1 ounce taco seasoning mix
2 ½ cups biscuit mix (such as Bisquick)
1 cup water
Cooking spray
½ cup sour cream
½ cup mayonnaise
4 ounces diced green chiles, drained
1 ½ cups shredded cheddar cheese (Fiesta blend), divided
1 teaspoon garlic powder
½ cup mild salsa
1. Preheat the oven
Preheat oven to 350°F (175°C).
2. Cook the ground beef
In a large skillet over medium-high heat, cook the ground beef until no longer pink, breaking it apart as it cooks.
Drain excess fat and set aside.
3. Prepare the biscuit base
In a mixing bowl, combine biscuit mix and water until a soft dough forms.
Spray a 9×13-inch casserole dish with cooking spray.
Press the dough evenly into the bottom of the dish.
Bake for 5–8 minutes until lightly set and slightly golden.
4. Cook the vegetables
Add chopped onion and red bell pepper to the cooked beef.
Cook for about 4 minutes until softened.
Stir in taco seasoning and mix well. Remove from heat.
5. Assemble the casserole
Spread the beef mixture evenly over the baked biscuit layer.
6. Prepare the creamy layer
In a bowl, mix sour cream, mayonnaise, green chiles, ¾ cup shredded cheese, and garlic powder until smooth.
Spread evenly over the beef layer.
7. Add salsa and cheese
Spoon small dollops of salsa over the top (no need to spread).
Sprinkle remaining shredded cheese evenly over everything.
8. Bake
Bake uncovered for 30 minutes, or until hot, bubbly, and golden on top.
Let the casserole rest for 5–10 minutes before serving for easier slicing.
You can substitute ground turkey for a lighter option.
Use spicy salsa or hot green chiles for extra heat.
Store leftovers in the refrigerator for up to 3 days.
