Ingredients

  • 2 cups cooked shredded chicken (rotisserie or homemade)
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 6 cups chicken broth
  • 1 can diced tomatoes (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 3/4 cup small pasta (ditalini, orzo, or small shells)
  • 2 tbsp fresh parsley, chopped
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened.
  2. Add garlic and cook for 1 more minute until fragrant.
  3. Pour in chicken broth and add shredded chicken, diced tomatoes (if using), oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes to blend flavors.
  5. Add pasta and cook until al dente, about 8–10 minutes, stirring occasionally.
  6. Adjust seasoning to taste and stir in chopped parsley.
  7. Serve hot with grated Parmesan cheese on top.
