Ingredients

  • 1 box brownie mix (or homemade brownie batter)
  • Ingredients for brownie mix (usually eggs, oil, and water)
  • 24 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 3 large eggs (for cheesecake)
  • 1/2 cup sour cream or heavy cream
  • 1/2 cup salted caramel sauce (plus more for topping)
  • Sea salt (optional, for finishing)

Instructions

  1. Preheat oven to 325°F (163°C). Line the bottom of a springform pan with parchment paper and grease the sides.
  2. Prepare brownie batter as directed. Spread into the pan and bake for 15 minutes until slightly set. Remove and set aside.
  3. In a large bowl, beat cream cheese with granulated sugar, brown sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing until incorporated. Fold in sour cream or heavy cream until smooth and silky.
  5. Pour cheesecake mixture over the brownie base and smooth the top.
  6. Bake for 45–55 minutes, until edges are set and center is slightly jiggly.
  7. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
  8. Refrigerate for at least 4 hours or overnight until fully set.
  9. Before serving, drizzle with caramel sauce and sprinkle with sea salt if desired.
