Ingredients

  • 1 package puff pastry sheets or 1 can biscuit dough
  • 2 apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 tablespoon butter
  • 1/4 cup caramel sauce or caramel bits
  • 1 egg, beaten (for egg wash)
  • Optional: coarse sugar or cinnamon sugar for sprinkling

Instructions

  1. In a skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, cornstarch, and lemon juice. Cook for 4–5 minutes until tender and thickened. Let cool.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Roll out puff pastry or biscuit dough and cut into 3–4 inch squares.
  4. Place a spoonful of apple filling in the center of each square, add a dollop of caramel or a few caramel bits.
  5. Bring corners together to seal into a ball or pouch. Pinch edges tightly and place seam side down on the baking sheet.
  6. Brush each bomb with beaten egg and sprinkle with coarse or cinnamon sugar, if desired.
  7. Bake for 15–18 minutes, until golden brown and puffed.
  8. Cool slightly before serving—fillings will be hot. Enjoy warm.
