Ingredients

  • 4 medium potatoes (russet or Yukon gold), peeled and diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 celery stalks, diced
  • 1 carrot, diced
  • 2 tbsp olive oil or butter
  • 2 tbsp Cajun seasoning
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • Optional toppings: crumbled bacon, shredded cheese, sliced green onions

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onion, celery, carrot, and garlic until softened.
  2. Stir in Cajun seasoning and cook for 1 minute to release its flavor.
  3. Add diced potatoes and pour in the broth. Bring to a boil, then reduce heat to a simmer.
  4. Cook for about 20 minutes, until potatoes are tender.
  5. Lightly mash some of the potatoes in the pot to thicken the soup, leaving some chunks for texture.
  6. Stir in cream, season with salt and black pepper, and heat through.
  7. Serve hot, topped with bacon, cheese, or green onions if desired.
