Ingredients

  • 45 Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

  • 1/4 tsp black pepper
  • 2 tbsp red onion, finely chopped (optional)
  • 1/2 cup fresh mozzarella pearls or cubed (optional)

Instructions

  1. Dice tomatoes and place in a mixing bowl.
  2. Add chopped basil, minced garlic, olive oil, and balsamic vinegar.
  3. Season with salt and black pepper, and stir gently to combine.
  4. Fold in red onion and mozzarella, if using.
  5. Let sit for 10–15 minutes to allow flavors to meld.
  6. Serve chilled or at room temperature with crostini, crackers, or veggie dippers.
