Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil (for marinade)
  • 1 tbsp balsamic vinegar (for marinade)
  • 2 cloves garlic, minced (for marinade)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cherry tomatoes or Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 clove garlic, minced (for topping)
  • 1 tbsp balsamic vinegar (for topping)
  • 1 tbsp olive oil (for topping)
  • Salt to taste
  • 2 tbsp red onion, finely chopped (optional)
  • 1/2 cup shredded mozzarella or shaved Parmesan (optional)

Instructions

  1. Pound chicken breasts to even thickness for even cooking.
  2. In a bowl, mix olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper. Marinate chicken for 15–30 minutes.
  3. Meanwhile, prepare bruschetta topping by combining diced tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and optional red onion. Let sit to meld flavors.
  4. Heat a skillet or grill pan over medium heat. Cook chicken for 6–7 minutes per side until cooked through and seared.
  5. Let chicken rest for a few minutes after cooking.
  6. Top each chicken breast with the bruschetta mixture.
  7. If using cheese, sprinkle over chicken and broil for 1–2 minutes until melted.
  8. Serve warm over greens or with roasted vegetables.
