Ingredients

  • 2 cups cooked brisket, shredded or chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1/2 cup heavy cream or milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme or rosemary (optional)
  • Salt and pepper to taste
  • 1 sheet prepared pie crust or puff pastry
  • 1 egg, beaten (for egg wash, optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Sauté onion, carrots, and celery until softened, about 5–7 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Sprinkle in flour and stir to make a roux. Cook until golden and smooth, about 2 minutes.
  5. Gradually whisk in beef broth and cream. Stir until thickened and smooth.
  6. Add brisket, Worcestershire sauce, and herbs. Season with salt and pepper. Simmer for 5 minutes.
  7. Remove from heat and let filling cool slightly.
  8. Pour filling into a pie or baking dish. Cover with crust, crimp edges, and cut slits for steam to escape.
  9. Brush crust with egg wash if using.
  10. Bake for 25–30 minutes, until crust is golden and filling is bubbling.
  11. Let rest for a few minutes before serving.
