Ingredients

  • 2 cups cooked brisket, shredded or sliced
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 4 waffles (homemade or store-bought)
  • 1 tbsp butter, softened
  • 4 slices cheddar cheese or smoked gouda

Instructions

  1. In a saucepan over medium heat, combine bourbon, maple syrup, brown sugar, and Dijon mustard. Simmer for 5–7 minutes until slightly thickened.
  2. Add brisket to the sauce and stir until coated and heated through. Season with salt and pepper to taste.
  3. Toast waffles until golden and crisp if not freshly made.
  4. Butter one side of each waffle. On the unbuttered side, place a slice of cheese, top with brisket, then another slice of cheese. Close with another waffle (buttered side out).
  5. Grill the sandwich in a skillet or panini press over medium heat, pressing gently and cooking for 3–5 minutes per side, until golden and cheese is melted.
