Ingredients

  • 2 lobster tails, split and shells slightly opened
  • 4 black garlic cloves, mashed into a paste
  • 4 tbsp unsalted butter, softened
  • 1 tbsp fresh thyme leaves, plus sprigs for glaze
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp honey or maple syrup
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with foil.
  2. Mash black garlic into a paste and mix with softened butter, thyme leaves, lemon juice, salt, and pepper.
  3. Lift lobster meat slightly above shells and spread black garlic butter on top.
  4. Place lobster tails on baking sheet and drizzle with olive oil.
  5. Bake for 10–12 minutes, until meat is opaque and lightly browned.
  6. Meanwhile, warm a small saucepan with a bit of butter or olive oil, thyme sprigs, lemon juice, and honey or maple syrup for 2–3 minutes. Remove from heat.
  7. Brush baked lobster tails with thyme glaze before serving.

Notes

  • Add Dijon mustard or white wine to glaze for extra flavor.
  • Broil the lobster for the last 1–2 minutes for a smoky finish.
  • Serve over mashed potatoes, pasta, or rice pilaf for a full meal.
  • Use regular garlic (roasted) if black garlic is unavailable.
