Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup Biscoff cookie butter spread
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed Lotus Biscoff cookies
  • Optional: 1/2 cup white chocolate chips or chunks

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, mix melted butter, brown sugar, and granulated sugar until combined.
  4. Add Biscoff spread, eggs, and vanilla to the sugar mixture and stir until smooth.
  5. Gently fold in the dry ingredients until just combined.
  6. Stir in crushed Biscoff cookies and white chocolate chips, if using.
  7. Pour batter into prepared pan, smooth the top, and sprinkle extra crushed cookies over it.
  8. Bake for 25–30 minutes, or until edges are golden and center is set but soft.
  9. Cool completely in the pan before slicing into 16 bars.
