Ingredients

  • 3/4 cup Biscoff cookie butter spread
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup crushed Lotus Biscoff cookies (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt butter and Biscoff spread together until smooth.
  3. Whisk in brown sugar and granulated sugar, then mix in eggs and vanilla extract until fully combined.
  4. Stir in flour, baking powder, and salt just until no dry streaks remain.
  5. Fold in crushed Biscoff cookies (optional).
  6. Pour batter into prepared pan and smooth the top with a spatula.
  7. Sprinkle extra crushed cookies on top.
  8. Bake for 25–30 minutes, until center is just set and edges are golden.
  9. Let cool completely in the pan before slicing into bars.
