Ingredients

  • 1 1/2 cups graham cracker or shortbread cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/3 cup heavy cream
  • 1 cup caramel sauce (store-bought or homemade)
  • 3/4 cup chocolate chips or chopped chocolate
  • 2 tbsp heavy cream (for ganache)
  • 68 Twix bars, chopped

Instructions

  1. Preheat oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper.
  2. Mix cookie crumbs and melted butter. Press into pan and bake for 10 minutes. Cool completely.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, sour cream, and 1/3 cup heavy cream.
  4. Pour batter over crust and smooth the top.
  5. Wrap pan in foil, place in a water bath, and bake for 55–65 minutes, until edges are set and center jiggles slightly.
  6. Cool completely at room temperature, then chill for at least 4 hours or overnight.
  7. Spread caramel sauce over chilled cheesecake and sprinkle chopped Twix on top.
  8. Melt chocolate with 2 tbsp cream to make ganache. Pour and spread over the Twix layer.
  9. Chill for another 30 minutes until ganache is set. Slice and serve.

Notes

  • Use chocolate cookies instead of graham crackers for a richer crust.
  • Swap in Snickers, Milky Way, or other candy bars for variation.
  • Make ahead and chill overnight for best flavor and texture.
  • Freeze without toppings for up to 1 month; add Twix and ganache after thawing.
