1 cup all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
2 tbsp sugar
1/4 tsp salt
3/4 cup milk or coconut milk
1 egg
1 tsp vanilla extract
Oil for frying (vegetable or canola)
Optional: cinnamon sugar or powdered sugar for dusting
Instructions
Heat oil in a deep skillet or saucepan over medium-high heat to 350°F (175°C).
In a mixing bowl, whisk together flour, cornstarch, baking powder, sugar, and salt.
Add egg, milk (or coconut milk), and vanilla extract; stir until smooth batter forms.
Dip each pineapple ring into the batter, coating well.
Carefully lower rings into hot oil, frying a few at a time to avoid overcrowding.
Fry for 2–3 minutes per side until golden brown and crisp.
Remove with slotted spoon and drain on a paper towel-lined plate.
