Ingredients

  • 810 pineapple rings (fresh or canned, drained and patted dry)
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 3/4 cup milk or coconut milk
  • 1 egg
  • 1 tsp vanilla extract
  • Oil for frying (vegetable or canola)
  • Optional: cinnamon sugar or powdered sugar for dusting

Instructions

  1. Heat oil in a deep skillet or saucepan over medium-high heat to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, cornstarch, baking powder, sugar, and salt.
  3. Add egg, milk (or coconut milk), and vanilla extract; stir until smooth batter forms.
  4. Dip each pineapple ring into the batter, coating well.
  5. Carefully lower rings into hot oil, frying a few at a time to avoid overcrowding.
  6. Fry for 2–3 minutes per side until golden brown and crisp.
  7. Remove with slotted spoon and drain on a paper towel-lined plate.
  8. While warm, sprinkle with cinnamon sugar or powdered sugar if desired.
