Ingredients

  • 2 cups fresh or frozen blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 packet (about 2 1/4 tsp) unflavored gelatin
  • 3 tablespoons cold water
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Optional: extra blackberries or mint leaves for garnish

Instructions

  1. Puree the blackberries in a blender or food processor until smooth.
  2. Strain the puree through a fine mesh sieve to remove seeds.
  3. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  4. In a saucepan, combine the blackberry puree, sugar, and lemon juice. Heat over medium heat until warm and sugar dissolves.
  5. Add the bloomed gelatin and stir until fully dissolved. Remove from heat and let cool to room temperature.
  6. In a separate bowl, whip heavy cream with vanilla extract until soft peaks form.
  7. Gently fold the cooled blackberry mixture into the whipped cream until smooth and well combined.
  8. Spoon into serving glasses or bowls. Refrigerate for at least 4 hours or until set.
