Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup sour cream or plain yogurt
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

For the cinnamon swirl:

  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 3 tbsp melted butter

For the glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk or cream
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together mashed bananas, eggs, granulated sugar, brown sugar, sour cream, oil, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Stir dry ingredients into wet ingredients until just combined.
  4. In a small bowl, mix the brown sugar, cinnamon, and melted butter for the swirl.
  5. Pour half the batter into the prepared pan. Spoon the cinnamon mixture over it and swirl with a knife. Add remaining batter and swirl lightly again.
  6. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes.
  7. Whisk powdered sugar, milk, and vanilla to make the glaze. Drizzle over the warm cake and let it soak in before slicing.
