Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry or grape tomatoes, halved
  • 4 cups fresh spinach
  • 1/4 cup balsamic vinegar
  • 1/4 cup chicken broth
  • 1 tbsp honey or brown sugar (optional)
  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. Add a little more oil if needed and sauté garlic for 30 seconds.
  4. Add tomatoes and cook for 2–3 minutes until softened.
  5. Pour in balsamic vinegar, chicken broth, and honey or brown sugar. Simmer for 3–4 minutes until slightly reduced.
  6. Add spinach and cook until wilted.
  7. Return chicken to skillet and spoon sauce over it. Simmer together for 2–3 minutes.
  8. Garnish with fresh herbs if desired and serve.
