Ingredients

  • 24 salmon fillets
  • 1 bunch asparagus, trimmed
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 23 garlic cloves, minced
  • Salt and pepper, to taste
  • Fresh dill or parsley, chopped
  • Optional: crushed red pepper flakes or 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut a large piece of foil for each salmon fillet. Place the salmon in the center of the foil and arrange asparagus next to it.
  3. Drizzle olive oil over the salmon and asparagus. Season with salt, pepper, and minced garlic.
  4. Top with lemon slices and sprinkle with fresh herbs and optional red pepper flakes or Dijon mustard.
  5. Fold the foil into sealed packets and place on a baking sheet.
  6. Bake for 15–20 minutes, or until the salmon flakes easily with a fork.
  7. Carefully open the packets (watch for steam) and serve hot with extra lemon, if desired.

Notes

  • Swap asparagus for green beans, zucchini, or broccoli based on availability.
  • Top salmon with a thin slice of butter for added richness.
  • Add soy sauce or Dijon mustard for a flavor variation.
  • Assemble packets ahead of time and refrigerate until ready to bake.
