Ingredients

  • 6 cups fresh baby spinach
  • 2 crisp apples (like Honeycrisp or Granny Smith), thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 small red onion, thinly sliced (optional)
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup dried cranberries or raisins (optional)
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons apple cider vinegar or lemon juice
  • 1 tablespoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Wash and dry spinach and apples. Toss sliced apples with a little lemon juice to prevent browning.
  2. In a large bowl, combine spinach, sliced apples, feta, and any optional add-ins like onion, nuts, or dried fruit.
  3. In a small bowl or jar, whisk together olive oil, vinegar or lemon juice, honey, salt, and pepper until emulsified.
  4. Drizzle dressing over salad just before serving. Toss gently to combine.
  5. Serve immediately while fresh and crisp.

Notes

  • For best texture, dress the salad just before serving.
  • Toast the nuts for added flavor and crunch.
  • Swap apples for pears or feta for goat cheese for variation.
  • Add grilled chicken or quinoa to make it a full meal.
  • Prep components ahead but slice apples fresh to avoid browning.
