Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups apples, peeled and diced or thinly sliced
  • 2 tbsp granulated sugar (for filling)
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. In a small bowl, beat egg with vanilla extract. Add to crumb mixture and mix until combined.
  5. Press two-thirds of the crumb mixture into the bottom of the prepared pan to form a crust.
  6. In another bowl, toss apples with sugar, cinnamon, lemon juice, and cornstarch (if using).
  7. Spread the apple mixture evenly over the crust.
  8. Crumble remaining dough over the top and gently press down slightly.
  9. Bake for 40–45 minutes, until top is golden and apples are bubbling.
  10. Let cool completely before slicing into bars.

  • Mix in dried cranberries or swap pears for apples for a twist.
