Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 tsp ground turmeric
  • 1 lb boneless, skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 2 cups baby spinach or chopped kale
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté for 3–4 minutes until fragrant and translucent.
  2. Stir in carrots and celery; cook for another 5 minutes.
  3. Add ground turmeric and stir to coat the vegetables.
  4. Place chicken in the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 25 minutes or until chicken is fully cooked.
  5. Remove chicken, shred with two forks, and return to the pot.
  6. Stir in lemon juice and spinach or kale. Cook for 3–5 minutes until greens are wilted.
  7. Season with salt and pepper to taste. Garnish with fresh herbs if desired. Serve hot.
