Ingredients

  • 2 medium zucchini, halved lengthwise and scooped
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup marinara or pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Optional toppings: pepperoni slices, diced bell pepper, sliced olives, fresh basil, crushed red pepper flakes

Instructions

  1. Preheat the air fryer to 375 °F (190 °C).
  2. Brush each zucchini half with olive oil and sprinkle garlic powder and Italian seasoning on top.
  3. Place zucchini boats in the air fryer basket, cut-side up, and cook for about 5 minutes until they start to soften.
  4. Remove from air fryer and spoon marinara or pizza sauce into each zucchini half.
  5. Top with mozzarella, Parmesan, and any optional toppings.
  6. Return to air fryer and cook for another 5–7 minutes, until cheese is melted and bubbly and edges are golden.
  7. Let cool for 1–2 minutes before serving.
