Ingredients

2 medium zucchini

½ cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

¼ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray or olive oil (for air frying)

Instructions

Prepare the zucchini:
Wash and cut zucchini into sticks (about 3–4 inches long, ½ inch thick). Pat dry with paper towels.

Set up dredging stations:

Bowl 1: Flour

Bowl 2: Whisked eggs

Bowl 3: Panko breadcrumbs, Parmesan, garlic powder, salt, and pepper

Coat the zucchini:
Dredge each stick in flour, dip into eggs, and coat in the breadcrumb mixture. Press gently to help the coating adhere.

Preheat air fryer:
Preheat to 400°F (200°C) for 3–5 minutes.

Air fry:
Arrange zucchini fries in a single layer in the air fryer basket (avoid overcrowding). Lightly spray with cooking spray or drizzle with a bit of oil.
Air fry for 10–12 minutes, flipping halfway through, until golden and crispy.

Serve:
Serve immediately with your favorite dipping sauce such as marinara, ranch, or garlic aioli.

Notes

For extra crunch: Double-dip the zucchini in egg and breadcrumbs before air frying.
