Ingredients

  • 4 bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Fresh parsley or basil (optional, for garnish)

Instructions

  1. Preheat air fryer to 360°F (180°C). Cut tops off bell peppers and remove seeds and membranes.
  2. Heat olive oil in a skillet over medium heat. Cook onion and garlic for 2 minutes, then add ground meat and cook until browned. Drain excess fat if needed.
  3. Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer until well combined and thickened.
  4. Stuff peppers with the filling, pressing down lightly. Top each with shredded cheese.
  5. Place stuffed peppers upright in the air fryer basket. Cook for 10–12 minutes or until peppers are tender and cheese is bubbly.
  6. Garnish with parsley or basil and serve hot.
