Ingredients

  • 2 boneless, skinless chicken breasts, sliced horizontally into cutlets
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs or panko
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley (optional, for garnish)
  • Olive oil spray

Instructions

  1. Slice chicken breasts in half horizontally to make 4 thinner cutlets. Season with salt, pepper, and garlic powder.
  2. Set up a breading station with three shallow bowls: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs and Parmesan in the third.
  3. Dredge each chicken cutlet in flour, dip in egg, then coat in the breadcrumb mixture, pressing gently to adhere.
  4. Preheat air fryer to 380°F (193°C) for 3 minutes.
  5. Spray the air fryer basket with olive oil spray. Place chicken in a single layer (in batches if needed), spray tops lightly with oil.
  6. Air fry for 10 minutes, flipping halfway through, until golden and crispy.
  7. Spoon marinara sauce over each piece and top with mozzarella cheese. Return to air fryer for 2–3 minutes until cheese is melted.
  8. Garnish with fresh basil or parsley and serve immediately.

Notes

  • Swap mozzarella with provolone for variation.
  • Add red pepper flakes to marinara for heat.
  • Use crushed pork rinds for a low-carb version.
  • Substitute almond flour and gluten-free breadcrumbs for gluten-free option.
  • Freeze breaded cutlets before adding sauce and cheese for make-ahead meals.
