Ingredients

  • 6 cups fresh baby spinach
  • 1 1/2 cups fresh strawberries, sliced
  • 1/2 cup crumbled feta or goat cheese
  • 1/3 cup sliced almonds or chopped pecans, toasted
  • 1/4 small red onion, thinly sliced

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Wash and dry the spinach and strawberries thoroughly.
  2. In a large bowl, arrange spinach as the base.
  3. Scatter sliced strawberries, crumbled cheese, toasted nuts, and red onion over the greens.
  4. In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until emulsified.
  5. Drizzle dressing over the salad just before serving and toss gently to combine.
