Ingredients

  • 2 slices whole grain bread or sandwich roll
  • 3 tablespoons hummus (any flavor)
  • 68 cucumber slices
  • 46 red bell pepper slices
  • 1/4 cup shredded carrots
  • 1/4 cup baby spinach or lettuce
  • 23 tomato slices
  • 23 thin red onion slices
  • 1/4 avocado, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. Spread hummus evenly on both slices of bread.
  2. Layer cucumber, bell pepper, carrots, spinach, tomato, and onion over one slice.
  3. If using, add avocado slices on top and season with salt and pepper.
  4. Top with the second slice of bread, press gently, and slice in half.
