Ingredients

1 large baguette or Italian loaf

3 ripe tomatoes, finely diced

4 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese (optional)

1/4 cup olive oil

1 tablespoon balsamic vinegar

Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Slice the baguette in half lengthwise and place cut-side up on the prepared baking sheet.

In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar. Stir until well mixed.

Brush the bread lightly with olive oil and toast in the oven for 5–7 minutes until slightly crisp.

Remove from oven and evenly spoon the tomato mixture over the toasted bread.

Sprinkle grated Parmesan cheese on top if using.

Return to oven and bake for 8–10 minutes, until tomatoes soften and edges of bread are golden.

Let cool slightly, slice, and serve warm.

Notes

For extra flavor, rub a raw garlic clove over the toasted bread before adding toppings.

Add fresh mozzarella for a Caprese-style variation.

Best served immediately for crisp texture.

Store leftovers refrigerated up to 2 days and reheat in oven for best results.
