Ingredients

  • 1 lb carrots, peeled and sliced into rounds or sticks
  • 23 garlic cloves, minced
  • 2 tbsp butter or olive oil
  • 1 tbsp brown sugar or honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 tbsp chopped parsley or thyme for garnish

Instructions

  1. Heat butter or olive oil in a large skillet over medium heat.
  2. Add sliced carrots and sauté for 5–7 minutes, until they begin to soften.
  3. Stir in the minced garlic and cook for another 1–2 minutes, stirring frequently to prevent burning.
  4. Add brown sugar or honey, salt, and pepper. Stir to coat the carrots evenly.
  5. Reduce heat to medium-low, cover the pan, and cook for an additional 5–10 minutes, stirring occasionally, until carrots are tender and glazed.
  6. Remove from heat and sprinkle with fresh herbs if using. Serve warm.

Notes

  • Use rainbow carrots for added color and presentation.
  • Maple syrup works well as a substitute for brown sugar or honey.
  • Add a splash of orange juice or balsamic vinegar for extra depth.
  • Red pepper flakes add a nice kick if you prefer a spicy version.
  • Roast instead of sautéing for a different texture—400°F for 25–30 minutes.
