Ingredients

  • 2 cups shredded beef (cooked until tender)
  • 2 cups red chile sauce
  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup vegetable oil (for softening tortillas)
  • Fresh cilantro (optional, for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the shredded beef until tender and easy to shred with a fork if not already prepared.
  3. Prepare the red chile sauce until smooth and rich.
  4. In a skillet, heat vegetable oil and lightly fry each corn tortilla until soft and pliable. Drain on paper towels.
  5. Spoon some chile sauce into the bottom of a baking dish to lightly coat.
  6. Fill each tortilla with shredded beef, a bit of cheese, and some chopped onion. Roll tightly and place seam-side down in the baking dish.
  7. Pour remaining chile sauce over the top of the enchiladas and sprinkle with remaining cheese.
