2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
¾ teaspoon baking powder
¾ teaspoon salt
⅛ teaspoon ground nutmeg (optional)
1½ cups mashed very ripe bananas
½ cup finely grated carrot
½ cup pure maple syrup (or honey or agave nectar)
¼ cup milk of choice or water
¼ cup oil or extra water
2 teaspoons vanilla extract

Step 1: Preheat the Oven
