Ingredients

→ Chicken & Crust:

1 tbsp butter

2 tbsp Italian seasoned breadcrumbs

2 tbsp olive oil

4 medium chicken breasts, pounded to even thickness

1 tbsp Italian seasoning

1 tsp garlic powder

1 tsp salt

→ Pasta & Sauce:

1 tbsp olive oil

½ cup diced onion

1 tsp minced garlic

2 cups uncooked rotini pasta (or any small pasta)

24 oz pasta sauce

1 cup water

→ Toppings:

1½ cups shredded mozzarella cheese

½ cup shredded parmesan cheese

1 tbsp chopped fresh parsley

Reserved toasted breadcrumbs

Instructions:

Toast Breadcrumbs:

In a large skillet, melt butter over medium heat. Add breadcrumbs and stir until golden and toasted. Remove and set aside.

Sear Chicken:

Wipe skillet clean. Heat 2 tbsp olive oil over medium-high heat.

Season chicken with Italian seasoning, garlic powder, and salt.

Sear for 2–3 minutes per side until browned (not fully cooked). Remove from skillet.

Build Pasta Base:

Add 1 tbsp olive oil to the skillet. Sauté onion and garlic for 3 minutes until tender.

Add uncooked pasta, pasta sauce, and water. Stir and bring to a boil.

Simmer Chicken & Pasta:

Return seared chicken to the skillet, nestling on top of the pasta.

Cover and reduce heat to medium-low. Simmer for 15–18 minutes, until pasta is tender and chicken is cooked through.

Add Cheese & Broil (Optional):

Stir pasta gently. Top each chicken breast with mozzarella and parmesan.

Cover to melt cheese or broil uncovered for 1–2 minutes to brown.

Finish & Serve:

Sprinkle with toasted breadcrumbs and fresh parsley. Serve hot!

Notes

Breadcrumbs add crunch but can be omitted.

Use any small pasta like penne or fusilli in place of rotini.

For added richness, stir in a splash of cream before serving.
