Ingredients

1 pound ground beef

1/2 teaspoon salt

1/4 teaspoon black pepper

4 large flour tortillas (10 inches each)

2 cups shredded cheddar cheese

1/4 cup chopped dill pickles

For the Special Sauce

1/2 cup mayonnaise

2 tablespoons ketchup

2 tablespoons finely chopped pickles

1 tablespoon finely diced onion

2 teaspoons white vinegar

For the Special Sauce

1/2 cup mayonnaise

2 tablespoons ketchup

2 tablespoons finely chopped pickles

1 tablespoon finely diced onion

2 teaspoons white vinegar

Notes

Preheat the grill:
Heat the Blackstone griddle to medium-high heat (about 400°F).

Cook the ground beef:
Add the ground beef to the hot griddle and cook, breaking it apart with a spatula until browned and fully cooked. Season with salt and black pepper while cooking.

Prepare the special sauce:
In a small bowl, mix the mayonnaise, ketchup, finely chopped pickles, diced onion, and white vinegar until smooth and well combined. Set aside.

Assemble the quesadillas:
Lay the tortillas flat on the griddle. Spread a generous amount of the special sauce on one half of each tortilla.

Add the fillings:
Top the sauced half with cooked ground beef, chopped dill pickles, and shredded cheddar cheese.

Fold the tortillas:
Fold each tortilla in half to create a quesadilla.

Cook until crispy:
Cook for 2–3 minutes until the bottom becomes golden brown. Flip carefully and cook another 2–3 minutes until crispy and the cheese is melted.

Slice and serve:
Transfer the quesadillas to a cutting board and slice each into four wedges using a knife or pizza cutter. Serve hot.
